Meet Matthew

I am a fully qualified Master Butcher returning to my farming roots having established Whitestaunton Lamb. My family have farmed here since the late 1800s and my Great Grandfather and his father were both Master Butchers in their own right. So I am keeping up a family tradition going back 4 generations.

Matthew the Butcher

Having worked at Bonners the Butchers full time since 2004 I trained under the tutelage of well known butcher Clinton Bonner and his late father Mike Bonner, both Master Butchers.

In 2010 I was runner up in the Butcher Shop of the Year awards Young Butcher of the Year and in 2017 competed (in the middle of my honeymoon) in Milton Keynes a national qualifier for the World Butcher Championships. We are still married!!

My passion for butchery has seen me compete in many competitions at national and regional level.

Matthew the Shepherd

This has only been superseded by my passion for livestock. One of the most enjoyable aspects of being a butcher is getting out onto farms, meeting the farmer and selecting livestock completing the field to plate cycle and never compromising on quality.

My farming heroes include Joel Salatin of Polyface Farms, Virginia, USA and Allan Savory, The Savory Institute. They are the epitome of how we can farm and produce a natural product which is not only good for the environment but also good for the soil.

I truly believe in producing lamb as sustainably and climate friendly as possible with high animal welfare going hand in hand with meat quality.

“Our lambs produce a truly sustainable, climate friendly product be it meat or wool from a low input, grass based system that runs alongside nature in a symbiotic relationship. It is one of the best kept secrets in sheep farming and one I would love to share.”
